“Spinto dalla curiosità di conoscere le origini dei biscotti di Prato, ho trovato l’antica ricetta conservata nel tomo XVII di Amadio Baldanzi (fondo Salvi Cristiani) presso l’Archivio di Stato, la prima a descriverne la preparazione. Provarla e mettere in produzione il biscotto è stato inevitabile, così ho acquistato il marchio e riproposto il dolce tanto apprezzato dai nostri antenati.”
“Driven by curiosity to discover the origins of the Prato biscuits, I found the ancient recipe preserved in the XVII tome of Amadio Baldanzi at the Archivio di Stato, the first to detail their making. Trying it and putting the result into production was inevitable, so I bought the rights to the logo and offered again the biscuit loved by our ancestors.”
